Often, at the end of the summer season, we ask ourselves: what to do with green tomatoes that have not yet matured. One of the ways to dispose of such tomatoes is delicious vegetable caviar, the various methods of preparation of which will be discussed in this article.
Caviar from green tomatoes without sterilization for the winter
Green tomato caviar is an excellent appetizer for meat, which can also be used for various sandwiches. Such rolls are stored for a long time, and the dish itself is prepared quite quickly, which is an ideal option for any housewife.

- Green tomato 1 Kg
- Carrot 500 gr.
- Onion 500 gr.
- Garlic 12 tooth.
- Tomato paste 2 tbsp
- Table vinegar 9% 2 tbsp
- Granulated sugar 4 tbsp
- Sunflower oil 100 ml.
- Paprika 1 tsp
- Ground black pepper taste
- Salt taste

Rinse the tomatoes, cut them and put them in a food processor.

Grind the tomatoes to a puree state, and send it to a pre-oiled pan. Bring the puree to a boil, cover the pan with a lid and cook over low heat for 15 minutes.

We peel the carrots with onions, we also cut them and send them to be chopped into the combine.

Add vegetables to tomatoes.

Mix everything thoroughly and cook for about 10 minutes under the lid. Then add tomato paste, paprika, garlic, pepper and salt. Mix and cook for another 5 minutes.

Bring the mixture to a homogeneous consistency with an immersion blender. Add vinegar and bring everything to a boil again.

We spread the caviar in sterilized jars, roll them up, and then turn them over and cover them with a blanket until they cool completely. We store the prepared caviar in a cool place. Bon Appetit!
Caviar from green tomatoes for the winter through a meat grinder
Delicious vegetable caviar from unripe tomatoes, which will definitely find its place on your table during the winter. The caviar is fresh, slightly spicy and incredibly appetizing.

Servings - 4.
Ingredients:
- Green tomatoes - 0.5 kg.
- Carrots - 200 gr.
- Bulb onions - 200 gr.
- Garlic - 4 cloves
- Bulgarian pepper - 2 pcs.
- Tomato paste - 1.5 tbsp. l.
- Vinegar 9% - 2 tbsp l.
- Granulated sugar - 2 tbsp. l.
- Sunflower oil - 70 ml.
- Bitter pepper - 1 pc.
- Salt to taste
Cooking process:
- To begin with, we prepare all the products: we wash the vegetables, and we also peel the carrots, onions and garlic.
- Grind all vegetables with a meat grinder, and then transfer them to a saucepan.
- Mix everything well and turn on the fire.
- Bring the vegetable mixture to a boil and reduce the heat to low. After that, cover the pan with a lid and simmer the vegetables for 20 minutes.
- Pour oil into a saucepan, add tomato paste, sugar and salt. Mix everything again and simmer under the lid for about 15 minutes.
- A couple of minutes before the end of cooking, add vinegar, mix the caviar and cook for another minute. Then we lay it out on sterilized jars and close the lid. Let the caviar cool completely before moving it to storage. Bon Appetit!
Delicious green tomato caviar without vinegar
Vegetable caviar is a storehouse of various nutrients. Therefore, such a snack is ideal in winter, when they are so lacking. This recipe presents a variant of green tomato caviar without vinegar, which makes its taste more delicate and subtle.

Ingredients:
- Green tomatoes - 0.5 kg.
- Carrots - 200 gr.
- Bulb onions - 200 gr.
- Garlic - 4 cloves
- Granulated sugar - 2 tbsp. l.
- Sunflower oil - 70 ml.
- Ground black pepper - to taste
- Salt to taste
Cooking process:
- Wash green tomatoes thoroughly.
- Cut them into slices, salt well and leave for about 2 hours, and then rinse.
- Chop the onion and fry in oil until transparent.
- Add finely chopped carrots to the onion and fry for another 7 minutes.
- Add tomatoes to the pan, reduce heat to medium.
- Stir the vegetables and fry them for another 10 minutes.
- Then add pepper, salt, sugar and other spices to your liking. We continue to fry the caviar, stirring occasionally, until tender.

The ideal way to process green tomatoes is vegetable caviar. Such a dish will perfectly complement any side dish or even be able to act as an independent snack. And the addition of tomato paste will give a juicy taste and bright color to the caviar.

- Green tomatoes - 1 kg.
- Carrots - 2 pcs.
- Bulb onions - 2 pcs.
- Garlic - 4 cloves
- Tomato paste - 1.5 tbsp. l.
- Sweet pepper - 2 pcs.
- Granulated sugar - 2 tbsp. l.
- Vinegar 9% - 1 tsp
- Sunflower oil - 100 ml.
- Salt to taste
Cooking process:
- Rinse the tomatoes thoroughly, then cut them into small slices.
- Grind the tomatoes with a meat grinder, put them in an enamel pan.
- Peel onions, peppers and carrots, chop them.
- We pass vegetables through a meat grinder and add to the tomatoes in a saucepan.
- Add oil, mix everything well and put the pan on fire. Bring the mixture to a boil and then leave to simmer under a lid over low heat for 40 minutes, stirring occasionally.
- After 20 minutes add chopped garlic, tomato paste, salt and sugar and mix all ingredients thoroughly.
- About 5 minutes before cooking, add vinegar to the caviar.
- We fill sterilized jars with caviar, close them with lids and turn them upside down. Cover with a blanket and leave to cool completely.

How to cook green tomato caviar for the winter in a slow cooker?
In this recipe, not only green, but also red tomatoes are added to caviar, which makes its taste very interesting and unusual. In addition, this dish is prepared in a multicooker, which greatly facilitates the cooking process.

- Green tomatoes - 300 gr.
- Red tomatoes - 200 gr.
- Bulgarian pepper - 3 pcs.
- Carrots - 2 pcs.
- Bulb onions - 2 pcs.
- Garlic - 2 cloves
- Granulated sugar - 2 tbsp. l.
- Vinegar 9% - 1 tsp
- Sunflower oil - 100 ml.
- Ground black pepper - to taste
- Chili pepper - to taste
- Salt to taste
Cooking process:
- Wash green tomatoes well.
- Cut them into small pieces.
- Pour oil into the multicooker bowl, put carrots and onions cut into pieces into it. We set the "Baking" mode for 40-45 minutes.
- After 10 minutes add the green tomatoes and stir the vegetables.
- After 5 minutes, add the chopped bell pepper.
- Add red tomatoes, salt, sugar and spices with the pepper. Stir and cook for another 20 minutes.
- Then add the garlic and leave the dish to cook until the end of the program.
- Grind the vegetables with an immersion blender until puree, add vinegar and select the "Baking" mode again for another 10 minutes.
- We lay out the caviar in sterilized jars, roll it up and leave it to cool under the blanket. Store the finished dish in a cold place. Bon Appetit!
